So over about the past year or so I've become very comfortable making our bread from scratch. As a matter of fact I haven't bought bread in months... I love the smell of bread. I love pulling it out of the oven all golden brown. I just love the entire process. (I don't do much kneading though I leave that to the bread machine or the stand mixer if I'm pressed for time).
Annnnyway... I decided to try making some homemade french toast sticks... I used my regular bread recipe which you can find here, except that I added some cinnamon sugar to the recipe. (Yup just add it right on in with the rest of the ingredients before mixing) Once you have it all nice and baked then you cut it into thick (texas toast sized) pieces..(maybe about 1 inch if you must get technical) then slice those into 4 pieces each. (This will make quite a bit, I actually made mine half at a time and wrapped the other half of the loaf and froze it until ready to create another batch). Once you have all your pieces cut then grab a few eggs and some more cinnamon sugar. (I usually mix my own cinnamon sugar.. no since in buying anything special) Beat the eggs like you're going to make scrambled eggs and mix in the cinnamon sugar. Coat the pieces nicely and "fry" them.. I guess they aren't really fried.. I just put a little oil in a pan and turned them until each side was nice and crispy like the photo. Then just allow them to cool and freeze them in a nice freezer bag.. BOOM! Homemade french toast. I just stick mine in the microwave to heat them up.. they are delicious with some powdered sugar and of course syrup.. or add some fruit.. whatever you want!! They can also be baked in the oven if you want them to stay crispy, 350° for 10-15 minutes or so but watch them all ovens are different!! Cut into thick "Texas Toast" slices. Cut each slice into 4 pieces (like french toast sticks) Drench in Egg + Cinnamon Sugar. Fry carefully in oil turning until all sides are brown. Allow to cool. Store in freezer bag in the freezer. To reheat use microwave or bake in oven @ 350 for 10-15 minutes.
