Taco Seasonings (Don't forget the salt and pepper - not pictured) Coat chicken with taco seasonings (and salt and pepper) It should look like this: Make the broth: Add all seasonings to 1 C of water. Cook chicken until browned and add half the taco broth: Add a Tablespoon of Corn Starch to the remaining half of the broth. I reserve 1/4 cup because after you mash the chicken it tends to get a little dry. It soaks up most of the liquid so you just need a little bit to finish it off. My son doesn't like the texture of "shredded chicken" so instead I mash it. It just makes it easier to fit into the taco. Once mashed, add the rest of the broth to finish. I think everyone's favorite thing about taco night is the variety and how we're all able to customize our own tacos. Hubby likes his with Guac. I like mine with Avocado Salsa. My son likes his with Jalapenos. We all like something a little different but they're all delicious and we look forward to them every week!
