I have yet another favorite successful from scratch recipe to share!!
We are BIG snackers.. me especially. And I love SWEETS.
I find myself in the kitchen many a nights making mug cakes or cookie bars lol. However, I was starting to look for a somewhat healthier alternative. I do enjoy the occasional apple, peanut butter with chocolate chips remedy but I wanted something ready made.. I know.. so lazzzzy.
How fun are these!? They came out awesome and my little man loved them!!
They were pretty easy to make.. almost like decorating cookies. I had some left over pizza dough in the freezer from the last time we made pizza. I just let it thaw and rolled it out flat, cut out the shapes and made pizza as usual.
The mini pepperoni's made it more fun too. The bigger ones would have consumed the shapes. After doing this I got many many more ideas.. I think this is fantastic!! How cool could your parties be with mini pizzas any shape you want!?!
I picked up 10lbs of potatoes at the farmer's market for $5! Which was a pretty awesome deal compared to the price at the grocery store. Now what to do with all of them?
Well. Around here we love french fries. I love potatoes anyway.
So these potatoes were quite large as well I got like 3 batches out of less than 5 potatoes.
It's quite simple actually.
I've never been a real huge fan of ground beef. I didn't actually eat hamburger until I married my husband. Even now I still eat it rarely but I won't pass up a really great burger or taco anymore. So I've been trying to find some great ground beef recipes, most of the ones I've tried are mediocre at best.. except tacos. That's pretty simple though.
However, last weekend I had a bacon avocado burger from Whataburger and it was phenomenal. Amazing. I've also been on a huge avocado kick here lately.. they are just really delicious. Last night I had a cooking epiphany. I decided to make a cheeseburger pie. I halved my regular homemade bread recipe and used that for the crust..
So over about the past year or so I've become very comfortable making our bread from scratch. As a matter of fact I haven't bought bread in months... I love the smell of bread. I love pulling it out of the oven all golden brown. I just love the entire process. (I don't do much kneading though I leave that to the bread machine or the stand mixer if I'm pressed for time).
I decided to try making some homemade french toast sticks... I used my regular bread recipe which you can find here, except that I added some cinnamon sugar to the recipe. (Yup just add it right on in with the rest of the ingredients before mixing)
Once you have it all nice and baked then you cut it into thick (texas toast sized) pieces..(maybe about 1 inch if you must get technical) then slice those into 4 pieces each. (This will make quite a bit, I actually made mine half at a time and wrapped the other half of the loaf and froze it until ready to create another batch).
Once you have all your pieces cut then grab a few eggs and some more cinnamon sugar. (I usually mix my own cinnamon sugar.. no since in buying anything special)
Beat the eggs like you're going to make scrambled eggs and mix in the cinnamon sugar.
Coat the pieces nicely and "fry" them.. I guess they aren't really fried.. I just put a little oil in a pan and turned them until each side was nice and crispy like the photo.
Then just allow them to cool and freeze them in a nice freezer bag.. BOOM!
Homemade french toast.
I just stick mine in the microwave to heat them up.. they are delicious with some powdered sugar and of course syrup.. or add some fruit.. whatever you want!!
They can also be baked in the oven if you want them to stay crispy,
350° for 10-15 minutes or so but watch them all ovens are different!!

Homemade Bread + Cinnamon Sugar
Eggs (1 or 2 depending on how many you make)
Make a batch of homemade bread (with the added Cinnamon Sugar) my recipe here.
Cut into thick "Texas Toast" slices.
Cut each slice into 4 pieces (like french toast sticks)
Drench in Egg + Cinnamon Sugar.
Fry carefully in oil turning until all sides are brown.
Allow to cool.
Store in freezer bag in the freezer.
To reheat use microwave or bake in oven @ 350 for 10-15 minutes.
