I love potatoes. I will eat potatoes in just about any form.. potato salad, mashed potatoes, french fries, julianne potatoes, hasbrowns, potato cakes, baked potatoes.. love them all. I like to make all mine homemade so for the past few years I've been practicing and trying out copy cat recipes. I made these potatoes the other night and they were soo good I thought I would share my recipe! |
Homemade Cream Cheese & Cheddar Scalloped Potatoes
3 White Idaho Potatoes
1/2 stick butter/margarine
1/2 brick cream cheese
1 tsp thyme
Salt & Pepper
1/2 cup milk
1/2 cup shredded cheddar cheese
Peel & slice potatoes. Cook potatoes on stove top in boiling water until fork tender.
While the potatoes are cooking combine the remaining ingredients in a small sauce pan. Turn the heat on low-medium and cover. Bring to a slow simmer. Stir once cream cheese has melted.. stir until smooth.
Drain potatoes (once fork tender) and place in 8x8 baking dish.
Pour cheese sauce over potatoes, stir carefully to incorporate.
Place in 400 degree oven and cook for 15 minutes or until browned and bubbly.
