Husband got himself an order of cheesy fries one day and realized to his delight that there happened to be BBQ Chicken left over in the fridge.
The rest is history. Here we are.
I made the potatoes on the stove top this time but they can also be made in the oven depending on your choice!
The BBQ Chicken is a no brainer... put it in the crockpot with your favorite BBQ sauce and seasonings and let it do it's thang.
I used Sweet Baby Rays and Heinz I think. Honey Chipolte and Sweet & Spicy. Also added some Garlic Powder, Chili Powder and Salt and Pepper.
As for the potatoes.
You can cut them in any way you like.
I decided to go scalloped this time so I just sliced them up. I peeled them as well but it's not necessary if you are cool with skins.
(I used 4 red potatoes)
Add your potatoes and cook until they are soft.
(Since I used the stove top this time I set the potatoes aside in the strainer while I made the sauce in the same pan.)
The cheese sauce can also be made multiple ways.
This is NOT the healthy version haha this is the southern-all-in version.
Cream Cheese (About half a brick)
Salted Butter (About 2-3 tablespoons)
(Just a sprinkle of each of these-to your liking)
Add all those ingredients to the sauce pan and let them start to melt over low-medium heat.
Then add milk. (I'd say I used maybe 2/3 of a cup)
Stir until sauce forms. This may take a few minutes.
At this point if it's too thick you can add more milk or chicken stock will work as well.
If you use water just be sure to season it a bit or your potatoes will be bland.
Top with more cheese. (I used Colby and Monterey Jack because I find it melts really well) Cover and let the cheese melt and viola your potatoes are done!
Put them in a bowl or plate or whatever it is you choose to eat out of ---top with BBQ Chicken and whatever other fixins you prefer!
I topped ours with Banana Peppers and Red Onions this time and we really liked it!
