So I decided to try some new flavors! Hubby isn't really into cookies much, or sweets in general... but he does like oatmeal raisin cookies so I decided to see if I could make a version he would like. These all still have a sugar cookie base because the point is to have different flavors to decorate.
I usually get a different Indulgent Trail Mix but they didn't have it so I just went with this one instead.
So I decided to coat them in powdered sugar and slice each of them into about 4 pieces.
The dried cherries were pretty big and easier to cut, but it did take about 10 minutes to chop them all up.
I used 1 cup of oats and I did throw those in the food processor and pulsed them a few times. More than likely unneccessary. Next time I will actually use more of the fillings.
Rolled out without any problems.
They taste good too! As I said before I wish I would have filled them a bit more, but at least I have the flavor down. I think maybe I didn't even need to pulse the oats.
I may leave them whole next time.
I did make half of this dough with cinnamon and half without. I was focusing on flavor so I wanted to see what the differences were. The cinnamon definitely won I think but they were both good.
I did get a picture of the peanut butter chocolate chip before they baked.
I definitely could have added more chocolate chips and I will in the future.

Oatmeal Craisin Rollout Sugar Cookies
1 C butter, softened
3/4 C granulated sugar
1/4 C brown sugar
1 1/2 tsp vanilla extract
2 1/2 C all-purpose flour
3/4 tsp salt
1/2 tsp baking powder
1 C Craisins & Dried Cherries
1 1/2 C old fashioned oats
Combine the butter and sugars.
Add egg and vanilla extract.
Once combined add flour and salt until dough forms.
Add dried cherries and oats and mix lightly.
Wrap in plastic and let chill 30 minutes to overnight.
Flour your surface and roll and cut into shapes.
Bake at 350 7-10 minutes.
Peanut Butter Rollout Cookies
(OR Peanut Butter Chocolate Chip Rollout Cookies)
1/2 C Butter
1/2 C Peanut Butter
1/2 C Brown Sugar
1/2 C Sugar
1 tsp Vanilla
2 C Flour
*1 C Chocolate Chips
(Optional, but recommended)
Combine butters and sugars. Add the vanilla and the egg. Once combined, add the flour until dough forms.
*(Add chocolate chips at this time)
Wrap and chill for 30 mins to overnight.
Flour your work surface, roll, cute and bake at 350 for 8-10 minutes.
Flavor experiment pretty successful. Still a few more flavors I want to try but I don't know when that will be. I have to work my way through all these first LOL.
Pretty sure I ended up with like 50 cookies by the time I was done.
